Tasty Artichoke and Arugula Pizza With Prosciutto Recipe

There is no better way to enjoy the spring season than a family meal outside in the warm weather. Keep this delicious artichoke and arugula pizza with prosciutto in mind as a quick and easy dinner that the whole family will love.


  • Cooking spray
  • 1 tablespoon cornmeal
  • 1 13.8 ounce can refrigerated pizza crust dough
  • 2 tablespoons pesto sauce
  • ½ shredded part skim mozzarella cheese
  • 1 9 ounce package frozen artichoke hearts, thawed and drained
  • 1 ounce thinly sliced prosciutto
  • 2 tablespoons shredded Parmesan cheese
  • 1 ½ cups arugula leaves
  • 1 ½ tablespoons fresh lemon juice


  1. Move your oven rack to the lowest setting, and preheat your oven to 500 degrees.
  2. Coat a baking sheet with cooking spray and sprinkle with cornmeal. Unroll the dough onto the baking sheet and pat into a 14 by 10 inch rectangle. Spread the pesto evenly over the dough, leaving about a ½ inch border for the crust. Sprinkle mozzarella cheese over the pesto. Put the baking sheet on the bottom oven rack, and bake for 5 minutes.
  3. Chop the artichoke hearts coarsely. Arrange the artichoke hearts on the pizza and top with the sliced prosciutto. Sprinkle the Parmesan cheese over the top. Put the pizza back into the oven, and bake for 6 more minutes, or until the crust is browned.
  4. Put the arugula in a bowl and toss with the lemon juice. Top the pizza with the arugula mixture. Cut the pizza into 4 rectangles, and then each rectangle into 2 wedges, and enjoy!
